Today’s guest blogger is maybe the helping hand I need in my house at the moment. Not only is her blog’s namesake one of my favourite meals but she has all the right, nutritional ideas for when you are a new Mum at home with bub and can’t be bothered with much fancies on the food front.
Meet Victoria from Boiled Eggs & Soldiers. Over the next two weeks she is going to cover the easy ways to eat best for both you and bub starting with, my favourite, breakfast!
Yay, your beautiful bundle of joy has finally arrived, congratulations and well done to you! There’s so much to do and learn with a newborn around that feeding yourself is often the last thing on your mind.
It’s so important though, to nourish and nurture yourself as well as your baby. To help you along I’ve put together some healthy (ish) meal suggestions. All the recipes are quick and easy and most can be done one-handed if necessary too! But my biggest piece of advice would be if anyone asks what they can do to help either give them a pile of laundry (how do such tiny babies make so much washing?) or get them to make you some meals!
Breakfast – the most important meal of the day
If you are ok with dairy then a bowl of Greek yoghurt topped with your favourite topping is a quick, easy and filling start to the day. I really like cinnamon on yoghurt, it is said (by some people in the know) that cinnamon can help relieve bloating and it may well have antibacterial and antimicrobial properties too, plus it tastes good! On top of the cinnamon I add pomegranate seeds as they are so good for you, lots of fibre, Vitamin C and potassium. (To save time you can now buy the seeds, arils, on their own from most supermarkets). Another option is to put a sprinkle of your favourite berries/ banana and muesli / granola on top either way by just adding a few extra bits to your yoghurt you are really increasing the nutritional value and creating a delicious meal that takes no time to make.
You could also make a smoothie – I’ve got some recipes ideas for Strawberry and/or Raspberry ones here.
Eggs are fantastic for breakfast (or any meal really) – omelettes, poached, scrambled or boiled however you like them they are packed full of goodness. Choosing which way to have them is probably the hardest thing about eggs.
English muffins are also filling with a variety of toppings or something like ricotta, banana & honey on sourdough will also fill you up for longer than just jam or vegemite on toast.
Some days cereals are all you are up for but if you can choose one of these other options you are getting a better nutritional boost so more bang for your effort!
To keep you going through the morning you can’t go past a fresh juice of some sort. In the hot weather I like this refreshing combination of my “Sweet & Citrus Juice”. It makes at least 2 big glasses of juice & it can be refrigerated for up to 24 hours if you want to keep one for the next day and yes, it’s green! I did say that these were healthy (ish) suggestions!
Sweet & Citrus Green Juice
Ingredients:
1 orange – flesh only
1 kiwi roughly chopped skin removed
1 C watermelon – flesh only roughly chopped
3 stems silver beet, leaves only
2 stems kale, leaves only
handful parsley
200 ml coconut water (or just water)
handful ice
Method:
- Put oranges, kiwi & watermelon in the Thermomix bowl or blender and give a quick blitz to make room for the rest of the ingredients (5 seconds / speed 5).
- Add silver beet, kale, parsley, coconut water and ice. Blend 1 minute/speed 10 or on high-speed in your blender
A couple of my other favourite juice recipes are my really green, Green Juice and seeing it’s summer this one is a great thirst quencher too, Pineapple Ginger Juice.

Overnight oats are the bomb! But I’m coming around to green smoothies…slowly!

In cooler weather my go-to breakfast is porridge with blueberries and strawberries. YUM!

Porridge in the microwave. 1/2cup rolled oats (or for gluten free lowans rice flakes are really nice too), 1 cup milk (rice milk for dairy free) or water microwave for bout 3-4 minutes. Sprinkle cinnamon and frozen berries on top, stir and let sit til berries are melted. Yum! My lazy eggs are 2-3 eggs cracked into bowl, splash of water or milk, pinch of sea salt, quick whisk with a fork then pour into hot non-stick pan. Stir until cooked. Instant scrambled eggs. If i have extra time/energy i add chopped mushrooms/tomato/baby spinach. Fav smoothies atm is half banana, handful frozen blueberries, handful or two of ice, decent chunk of cucumber, couple sticks of celery, small handful of green leaves. Blend. Not terrible and soo healthy. Oh and i add a raw egg for protein.
That juice sounds so good…I will have to put the ingredients on my shopping list.
I am a porridge girl…every day. I change it up a bit but lately I have been stirring a spoonful of raspberry jam though.
And then as, thanks to breastfeeding, I am hungry two hours later, I have a smoothie for morning tea!

I’m a big fan of breakfast smoothies – On Sundays I cut up a bunch of fruit and veg like celery, broccoli, apple, banana, cucumber and berries, and package single smoothie serves into ziplock bags in the freezer. Then each morning I just grab a bag of frozen f&v, add some fresh green leaves, some coconut water and some chia seeds, and I’ve got breakfast ready in 30 seconds. If I need extra sweetness I add a medjool date. Love it 🙂

Great suggestions Vicki – and great post idea Karin 🙂 My babies are not really babies any more but I do find that I get slack with my breakfast because I put their needs and the chaos of getting everyone out of the door before my own hunger. The yoghurt with topping idea is a great one though. I can do that! If I am feeling organised toast with banana, sliced strawberries and honey is yummy and pretty nutritious. x

I think my fave breakfast is chia pudding with a handful of oats soaked as well. I love things you can make the night before.
